Thomas Penfold described his occupation at death as a butter searcher.
A searcher is given numerous definitions in the Compact Edition of the OED published 1979 with copyright Oxford University Press 1971. The Preface is dated August 1933 The complete text has been reproduced micrographically. Page 2696 contains page 354 of the letter S:

It would appear that a butter searcher was essentially a quality inspector for butter and may even been able to certify the quality and/or source

When she married, Mary may have been a spinster as in the marriage license bond signed by both Thomas Penfold and John Swann or a widow as on the allegation signed by only Thomas Penfold. One can only assume both could read & write as Thomas wa s a gentleman and John a merchant.
While Thomas Penfold is Ann Penfold's father, it is not clear whether Mary Swan was Ann's mother. She may well have been her step-mother. It was more than likely Ann was born before 1741 especially as her burial record implies she was born in 17 33.

Ann Penfold's mother is unlikely to have been Mary (Swan). Mary would have been her step-mother. From her age at burial 55 on 22 Apr 1788 she was born 1733. Her father was Thomas Penfold as she is mentioned in his will & the executors sworn statement & at her burial as d of Thomas Penfold. He had married Mary Swan in 1741. Perhaps there was a marriage in between Ann? Thomas's first wife & Mary Swann.

While none of the children's baptisms are recorded in St Martin cum Gregory, Micklegate's PR, their burials are and those of their parents and half brother and sister. Assuming the family was Presbytarian from the start, an C of E marriage was t he Law and the Presbytarians may not have required infant baptisms although they seem to have started about 1768 or 9. Burials were not done by the Presbytarians until after 1771. George Hicks must have made the family C of E again.

John Wornham Penfold (1828 – 1909) was a surveyor and architect born in Haslemere, Surrey where he is also buried. The house in which he once lived, "Penfolds", is still to be found near the centre of the town.
Penfold is perhaps best known for his design of the British hexagonal post box in 1866, now known as a Penfold box.

Searcher - First I Give devise and confirm All my Estates of whatsoever tenure
or nature situate in the County of Surrey and all my Right and Title therein To
my Son T homas Penfold his Heirs and Assigns to his and their own use forever
--- Item I Give and Devise All my Houses Warehouses Stables and Hereditaments
Garden and Premisses situate and being in Micklegate and Fetter lane in the
City of York afores aid and all other my real Estate in the said city unto and
to the use of my two Daughters Susannah Gurrell of Gainsborough in the County
of Lincoln Widow and Ann the Wife of William Jackson of the said City of York
Grocer equally to be divide d ? their Heirs and assigns for ever as Tenants in
Common unless either of them should dye in my Life time in which case I Give her
Moiety therein to the children or child of such of them so dying who shall be
living at my decease their his or h ers Heirs and Assigns forever and if more
than one in like manner as Tenants in Common Nevertheless I do charge and make
chargeable my said Houses and Premisses in the said City of York with two
several annuities or yearly rents, towit, one c lear Annuity of twenty pounds
for the use of my Daughter Hannah Penfold for and during her Life, And one
other clear Annuity of ten pounds for the use of my said Son Thomas Penfold
during his Life, both the said Annuities to be paid into th e hands of my
Brother Mr John Wornham Penfold and John Swann and Thomas Swann both of the
said City of York Merchants and the Survivors and Survivor of them upon the
Receipt of any one or more of them to be by them as Trustees applied hal f
yearly or oftener as they shall find it necessary for the Manitenance clothing
and benefit of the said Annuitants respectively in such manner and at such times
as my said Trustees shall think proper, with a power of distress and entry in
cas e of non payment of the said Annuities or either of them by the space of
twenty days after any half year commencing from my decease to and for my said
Trustees and for sale of the Goods so distrained in like manner as distreßses
are usually mad e for Rents in arrear according to the Laws and Statutes of
this Kingdom for satisfying the same Annuities or so much as shall be so unpaid
with all Costs and Damages Attending the same ---- Item I Give and bequeath
unto my said Son Thomas an d Daughter Hannah Penfold ten pinds apiece to be
paid out of my Personal Estate immediately after my decease Item I Give and
bequeath all the residue and remainder of my Personal Estate of any nature or
kind whatsoever subject to the paymen t of my Just Debts and Funeral Expences
To my said Daughters Susannah Gurnell and Ann Jackson equally to be divided
between them unless either of them should dye in my life time leaving Issue then
such Issue and if more than one equally to b e divided shall be intitled to
their parent's share in such moiety and if without Issue the the whole residue
of the personal Estate to go to the Survivor of my said two Daughters Provided
always nevertheless and my will and mind expressly is th at my said residuary
Legatees shall within three months after my decease pay into the hands of my
Trustees so much Money out of my Personal Estateas they my said Trustees
shall esteem sufficient to be added to the Houses for the better secur ing the
Annuities aforesaid and to be by them from time to time placed out at Interest
in their names to answer those purposes so long as they shall think it neceßsary
And I do constitute my said two Daughters Susannah Gurnell and Ann Jackso n
Joint Executrixes of this my will hereby revoking all former and other Wills
Codicils and Testamentary Schedules by me made In Witness whereof I the said
